Holiday Recipe: Spiced Cranberry Orange Muffins

Ingredients
Muffins
- 1 1/2 cups fresh or frozen cranberries (coarsely chopped) 
- 1/2 cup granulated sugar 
- 1/4 cup brown sugar, packed 
- 2 cups all-purpose flour 
- 2 tsp baking powder 
- 1/2 tsp baking soda 
- 1/2 tsp salt 
- 1/2 tsp ground cinnamon 
- 1/4 tsp ground nutmeg 
- 1/4 tsp ground cloves 
- 1/2 cup vegetable oil 
- 1 cup buttermilk (or substitute with 1 cup milk + 1 tbsp lemon juice) 
- 1 large egg 
- Zest of 1 orange 
Cinnamon Streusel Topping
- 1/4 cup all-purpose flour 
- 1/4 cup brown sugar, packed 
- 1/2 tsp ground cinnamon 
- 2 tbsp cold unsalted butter, cubed

Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or grease the cups. 
- Prepare the cinnamon streusel topping: In a small bowl, combine the flour, brown sugar, and cinnamon. Cut in the cold butter using a fork or pastry cutter until the mixture resembles coarse crumbs. Set aside. 
- Mix the dry ingredients: In a large bowl, whisk together the flour, baking powder, baking soda, salt, cinnamon, nutmeg, and cloves. 
- Combine wet ingredients: In a separate bowl, mix the granulated sugar, brown sugar, vegetable oil, buttermilk, egg, and orange zest. Stir until the mixture is smooth and well-combined. 
- Add the cranberries: Gently fold the chopped cranberries into the wet mixture. 
- Combine wet and dry ingredients: Pour the wet ingredients into the dry ingredients, stirring until just combined. Avoid over-mixing; a few lumps are fine. 
- Scoop batter into muffin tin: Divide the batter evenly among the muffin cups, filling each about 3/4 full. Sprinkle the cinnamon streusel topping generously over each muffin. 
- Bake: Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow muffins to cool in the pan for 5 minutes before transferring them to a wire rack to cool completely.
